Cauliflower Gnocchi Creamy Chicken Dish

We found ourselves inspired by these recipes for gnocci and creamy chicken on TikTok, and decided to combine them to create the ultimate winter meal! Ingredients:

For the gnocchi:

-1 head cauliflower

-2 cups Flourish flour

-1 egg

-1 tbsp cornstarch

For the creamy chicken:

-1/2 cup Flourish flour

-Salt, pepper, garlic, paprika

-2 large chicken breasts, diced

-2 tbsp butter

-2 tbsp olive oil

-2 tbsp minced garlic

-1 cup chicken broth

-1 cup heavy cream

-1 cup freshly shredded parmesan cheese

-1/2 tsp each of red pepper flakes, thyme, and oregano.

Cauliflower Gnocchi Dough:

1. Begin by chopping a head of cauliflower and boiling it in salted water until tender.

2. Remove from heat, and blend the boiled cauliflower to create a smooth puree.

3. Mix one cup of the cauliflower blend with 2 cups of Flourish flour, 1 egg, and 1 tbsp cornstarch.

4. Allow the dough to rest for 20 minutes.

5. Cut and roll out dough on a floured surface, then cut into one-inch pieces.

6. Optional – roll each piece down a fork to form the classic lines.

7. In a medium saucepan, bring water to a boil, adding the gnocchi and cooking until they float.

8. Set aside.

Creamy Chicken:

1. Season 1/2 cup of Flourish flour with salt, pepper, garlic, and paprika.

2. Add diced chicken to the flour blend and stir until evenly coated.

3. In a skillet, heat olive oil and butter on medium high heat.

4. Add the coated chicken to the saucepan, cooking until golden brown and it reaches 165 degrees. Remove the chicken from the pan and set aside.

5. In the same pan, add 2 tbsp minced garlic, 1 cup chicken broth, 1 cup heavy cream, freshly shredded parmesan cheese, red pepper flakes, thyme, and oregano. Combine.

6. Add 1/3 cup sun-dried tomatoes.

7. Stir together well and let simmer. We recommend lowering the heat to about medium low/low.

8. Add the gnocchi, cover, and let cook for 2-3 minutes or until gnocchi are cooked to your liking.

8. Finally, reintroduce the chicken to the pan, combining until fully coated.

9. Serve and enjoy!
