Everything tastes better when it’s summertime and the living’s easy! As we approach the beginning of a new school year (can you believe it?), this is the time of year that we like to pull out our tasty summer wish list with all the yummy summer break treats we’ve been waiting to try! The following three recipes are sweet, chilled and refreshing - perfect for enjoying after the heat of the day or as a back-to-school celebration snack during the long Labor Day weekend that marks the official end of summer. Higher in fiber and fewer in net carbs, the Flourish flour used in these recipes is a versatile pantry staple, suitable for baking cool and refreshing goodies all year long.

This pink, slightly tart raspberry curd meringue pie boasts a delicious buttery pastry crust filled with a smooth purée topped with the signature caramelized, stiff peaks of a classic meringue. There’s a handful of seemingly challenging steps to follow in this recipe, but trust us: you are more than capable of pulling this meringue off to perfection. And if you’ve never done it before today, we invite you to undertake your first “blind baking” moment, which is just a fancy way of saying you’re going to be pre-cooking the pie's crust. What this’ll do is ensure that no soggy bottom is lurking on the underside of your delicious, semi-tart meringue. The fresher the raspberries, the better the taste and we do NOT recommend using frozen berries for this - it’s a summer recipe, after all, so take the time to find the freshest berries you can! Your finished product will have a lovely crunch as you put a knife through it and a soft, creamy interior from the purée filling. Delicate yet distinctive in flavor, this meringue is well-suited for a big get together of friends and family, and if needed can be stored in the fridge for up to two weeks (but something tells us that won’t be an issue!).

Composed of four layers of chocolatey, creamy, swoon-worthy pudding, a pecan crumble base and delectable shavings of even more chocolate, this chocolate delight has a little something for everyone. And by a “little,” we mean a lot, because this chocolatey dessert is packed with flavors, stacked high on top of one another. Featuring cool layers of creamy fillings, each layer requires about 20 minutes of setting time in between the addition of the next layer so your chocolate delight holds its structural integrity without turning into a gloopy mess. This includes allowing the pecan crumble crust to cool completely before adding the first layer of cheesecake filling! Please don’t ask us how we know this is an unskippable step 😉 For the final flourish, take a kitchen grater to create chocolate shavings on top. We steadfastly believe that one can never have too much chocolate, so this dessert rides the line between being a little extra and being on team too much. It’s all about balance!

This scrumptious strawberry showstopper is pure summer: sweet, fresh and the stuff that tasty memories are made of, shared with friends and family. Fresh strawberries are the star of this dessert, and like a tasty parfait, this strawberry dessert is all about layers. The outer layer of this dessert, which is prepared and served in a big bowl, consists of sliced strawberry cake pieces to serve as the semi-solid exterior wall, encasing the creamy interior layers that you’ll assemble one at a time. Each layer of rich cream will require time to cool down and set properly, so make sure to plan your time accordingly. By the end of the layer assembly process, you’ll have alternating layers of cream, strawberries, homemade whipped cream and more strawberries! There’s just something about fresh, in-season strawberries that simply hits different, so load ‘em up while you can and enjoy this super strawberry dessert!
