Apple Fritters

Ingredients:

1 1/2 Cups Flourish Flour

2 teaspoons baking powder

1 teaspoon cinnamon

1/4 teaspoon ginger

1/4 teaspoon nutmeg

1/2 teaspoon kosher salt

2 large eggs

2 tablespoons salted butter, melted

1/2-3/4 cup whole milk

1 tablespoon real maple syrup

3-4 Honeycrisp apples, peeled (if desired) and chopped

Topping Glaze: 

1 1/3 cups powdered sugar

1/4 cup whole milk

1-2 tablespoons real maple syrup

2 teaspoons vanilla extract

2-3 teaspoons instant coffee

flaky sea salt

Instructions: 

1. In a medium bowl, combine the flour, baking powder, cinnamon, ginger, nutmeg, and salt. Add the eggs, butter, 1/2 cup milk, and maple, and mix until just combined, being careful not to over mix the batter. If the the batter feels thick, add 1/4 cup milk to thin. Fold in the apples.

2. Heat 1-2 inches of oil in a large skillet over medium-high heat. Drop tablespoons size balls of batter into the oil for 4-5 minutes or until golden and crisp on all sides. Remove and drain on a wire rack with paper towels underneath.

3. To make the glaze, whisk together the powdered sugar, milk, maple, vanilla, and coffee powder. Add a pinch of flaky seas salt. Drizzle the glaze over the warm fritters. Eat warm. And enjoy.

For breads, rolls, and other yeast-raised baked goods: Increase liquids ¼ cup (60g) at a time until you reach the desired dough consistency.

For cookies: Increase liquids 1 tbs. (15g) at a time until you reach the desired batter or dough consistency.

For brownies, quick-breads, muffins, pancakes, waffles, pie crusts and more: Increase liquids 2 tbs. (30g) at a time until you reach the desired batter or dough consistency.
