Back to (Home?) School: Bridge meal time with delicious, kid-approved recipes

Ah, back-to-school season. That magical time of year when the air smells like fresh Zoom calls and face masks. It’s safe to say this school year is going to be... different. No more “Put the screen down and do your homework!”. Whatever back-to-school is bringing to your world, we at Flourish can relate.

We see you transforming your dining room into homeroom while your kids’ devices beg for mercy. You’re playing ringmaster, doing your best to keep every ball in the air for your family’s health and well-being.

Here’s one thing we know: things get messy and that’s okay. For us, family baking projects have been providing a reprieve from the race and a dose of family fun that delivers an indescribable comfort. Even if it’s a bit of chaos, it’s the best kind – it's the quality kind, and we’ll take every bit of it. 

Another thing we’ve learned in 2020 is that if we’re going to lean on baking as a go-to family activity, we need to find ways to make it tasty and healthy.

We’re eagerly working to bring you our high-fiber flour in mid-November (sign up for updates!). 

In the meantime, here are three kid-approved recipes that also happen to be nutritious and are ideal snacks for those in-between mealtime moments.

Zucchini Cheddar Muffins

These savory, cheesy muffins pack a sharp bite of cheddar and stay perfectly moist thanks to the grated zucchini. The fresh ground pepper, onion and subtle minty flavor of thyme combine together for a hearty muffin to satisfy hungry bellies between morning Zoom sessions.

With a simple ingredient list, divvying up kitchen responsibilities is as easy as pie as you work shoulder-to-shoulder with your junior baker.

No matter what time of day you enjoy these muffins, we recommend a quick 8 seconds in the microwave to ignite the flavors of these cheesy, yummy, high fiber muffins. Bon appetit!

Peanut Butter Bars

Some days it’s tempting to declare snack time a bust and just send your kiddo out the door armed with nothing but a spoon and a half eaten jar of peanut butter. 

We’ve been there 😉. 

Up your snack game while indulging in a very peanut butter-y homemade treat, with this perfect blend of sweet, salty, smooth, soft, chewy and just flipping tasty snack bars. There’s three components you can include: a peanut butter blondie base, peanut butter icing, and a sea salt & crunchy roasted peanut crumble topping.

We’d recommend filing this recipe into your, I just need one thing to go right today,” folder, because when baking with copious amounts of peanut butter, everything is just a little bit better.

Packed with protein, these bars are excellent after school fuel to tide over growing bodies until dinner time. Side note, we’ve also heard these bars taste great at literally every moment of every day... because peanut butter.


Banana Bread 

The strong, distinct smell of a ripe banana in the morning. Packed with Vitamin C and potassium, there’s not much better than a banana in its prime. But what happens when you miss the vibrant yellow window of ripe-ness and your bananas devolve into squishy, brown spotted, broken boomerangs? 

It’s time to make banana bread, that’s what. 

Ripe and slightly over-ripe bananas are perfect for these soft, aromatic, flavor-filled loaves of nutritious, high-fiber banana bread. 

The key to this bread is in the banana mashing. If you’ve got an aspiring percussionist in your house, they’ll love the chance to mash some bananas down to a smooth, lump-free base. In the event of a mixing fiasco that leaves your walls, ceilings, floors or pets covered in mashed bananas and Flourish Flour, please please please send us pictures. Opa! 

Three easy-to-make, high-fiber snacks you can prepare at home with helpers of all ages and baking skills. 

We know the process is messy, and honestly, we think that’s the most important part. In life as in the kitchen, the mess is okay. It’s all about the journey. The icing on the cake? The end result tastes pretty great as well and gives that extra dose of fiber we can all benefit from.
