Wow, these cookies are packed with so much flavor! Trust us, you need to make these this holiday season, especially if you love pecan pie. Plus, when you make this recipe with Flourish you're not only getting the nutrients from the pecans but added fiber as well.
Ingredients:
½ cup butter softened
⅓ cup oil vegetable or canola oil
½ cup granulated sugar
¼ cup powdered sugar
1 egg at room temperature
1 teaspoon vanilla extract
2 & ⅓ cup Flourish Flour
¼ teaspoon salt
1 teaspoon baking powder
Pecan pie filling
5 tablespoon butter
⅔ cup brown sugar
1 & ¼ cup chopped pecans
1 teaspoon vanilla extract
⅓ cup heavy cream
¼ teaspoon cinnamon
1 pinch nutmeg
1 pinch salt
Instructions:
- Preheat your oven to 350°F, and prepare a baking sheet by lining it with parchment paper; set it aside.
- In a spacious mixing bowl or using a stand mixer, combine the butter, oil, sugar, and powdered sugar until well creamed.
- Integrate the egg and vanilla extract into the mixture, ensuring thorough combination.
- Next, incorporate the flour, salt, and baking powder, and blend until the ingredients are fully integrated.
- Using a generous cookie scooper, shape the dough into 9 evenly sized balls. Place them on the prepared baking sheet and gently flatten them to a thickness of about 1 inch. Using a ¼ measuring cup, create an indentation in the center of each cookie to make space for the pecan pie filling.
- Bake in the preheated oven for 8-9 minutes, then allow the cookies to cool on the baking sheet.
Make the pecan pie filling:
- In a medium saucepan set over medium heat, combine the butter, brown sugar, and pecans until the butter and sugar have completely dissolved. Stir occasionally to ensure that all the pecans are evenly coated in the buttery sugar mixture. Allow the mixture to bubble for 1-2 minutes.
- Introduce the cinnamon, nutmeg, salt, heavy cream, and vanilla into the saucepan, and whisk thoroughly to achieve a well-combined mixture.
- Remove the saucepan from the heat and generously top the cookies with the pecan pie mixture. Allow it to cool for 20-30 minutes before indulging in the delightful flavors. Enjoy!
